I’d been searching for the best carrot cake recipe ever until I found it!,thanks for blueshirttail. Wow! I made it for my husband’s birthday who was just hooked on this delicious and moist cake.
I did added a hint of whisky to the dough and also grated half of an apple.
      Something that you’d die for.
Yeah, stuff were all over in the kitchen, my mom on skype, trying to help while I was watching your video.
Thanks for sharing it with us. Great Grandmas are great!

@sharifah61 One stick of butter is 1 quarter of a pound. 1pound is 454gramms which should be devided by 4 in order to get ‘a stick’.

I made this in cupcake/muffin form (without the frosting). Half of this recipe yields 12 cupcakes, in case anyone is interested. Also, I used olive oil, which I feared could be too strong, but it turned out so delicious!!
I have tried other carrot cake recipes but yours is truly the best. Thank you so much for sharing it!

Your recipe is similar to mine except that I use 2 t baking powder, no vanilla and 3 cups cooked sliced carrots — you can also use canned carrots but I cook them fresh. I’ve tried a few different recipes for carrot cake and I think the trick to a really good one is the 1 and 1/2 cups of oil with 4 eggs. I’m sure yours is delicious, too, mine is always gone in a day — lol!

This is a great receipe. I wonder if it’s ok to add in crunch pineapples as suggested in some receipe. One more question, you baked for 30 mins at what temperature?
